Penne with pumpkin sauce

An Autumn flavored dish!

THE RECIPE

In a big enough pan

brown the onion with some vergin olive oil,

then, on a low heat, add the pumpkin pulp, previously boiled

and reduced into a mash

Add salt and some fresh ground black pepper.

Let the pumpkin mash cook very swoly until it’s completly cooked.

Add the penne, cooked until just firm, to the pumpkin sauce

and mix it up for 2/3 minutes, on a high flame,

adding some pennes cooking water, that you kept.

At the end, add some seasoned pecorino cheese

and some chopped parsley.

INGREDIENTS FOR 4 PERSONS

PENNE about 500 gr.

YELLOW PUMPKIN PULP

1 SWEET ONION

EXTRA VERGIN OLIVE OIL

SALT and PEPPER

SEASONED PECORINO CHEESE about 200 gr.
